Today I am going to write about a very simple recipe of chicken Momos and you can serve these chicken Momos with normal chutney. First let us make a note of the ingredients that we need for this recipe.

 

Ingredients

·         200 grams of Boneless Chicken ( Chicken thigh is more succulent and tender for the momos)

·         1/2 Teaspoon of crushed black pepper

·         1 small piece of ginger finely chopped

·         7-8 flakes of garlic finely chopped

·         2 tbsp of chopped fresh coriander

·         1/4 cup of spring onion (green portion finely chopped)

·         Salt to taste

·         1 TSP of oil

·         2 cups of all-purpose flour or Maida

·         Water to knead the dough

·         1 medium sized finely chopped onion  

 

Step 1. Knead a Firm Dough

Take 2 cups of all purpose flour in a diner bowl and add little salt and oil.  Give this a good mix and now add a little water in small portions while mixing the water with the flour or Maida and kneading it so as to ensure that the it does not become too soft. Avoid pouring all the water in the first instant and instead add little by little while and check the consistency. Make a soft smooth dough. We need to keep in mind one thing that the dough does not become too stiff or too soft. Once the dough is medium soft, stop adding any more water and nicely tap it. It should be like a rubber and does not get stuck to the hand. You may add a little oil in the dough to make it soft. Once the dough is ready, cover it with a damp cloth  and keep it aside for 10 to 15 minutes minimum.

 

Step 2: Prepare Momo Stuffing

Take the boneless chicken that you have got and add this chicken to your blender jar. You can use chicken breast piece but the thigh piece will be much better as the fat  that comes along with the chicken thigh boneless will give the chicken momos a very good taste.

Add this chicken to your blender jar or mixer jar and blend this to a coarse. Avoid blending it more or to fine pieces. Coarsely grinded chicken pieces should look like minced chicken.

 

Add the following ingredients to the minced chicken in order to prepare the stuffing.

1.       Take ¼ cup of spring onion and finely chop the green portion alone. Add the chopped spring onion to the minced chicken.

2.       2 tablespoon of chopped fresh coriander leaves or more as per your taste.

3.       ½ teaspoon of crushed black pepper

4.       Chop one small piece of ginger to fine pieces and add .

5.       Remove skin from the garlic pieces, chop finely and add to the mix.

6.       Remove skin from the onion and chop it finely.  Add to the mix.

7.       Add 1 teaspoon of oil

8.       Add little salt as per the taste

Give all the above (Chicken and the ingredient) a good mix to make the stuffing ready. Now our stuffing is ready.

Step.3: Prepare outer cover for Momo

Remove the damp cloth from the dough which we had prepared in first step. I am sure at least 15 minutes would have elapsed by now and the dough would have got slightly fermented.  We need to knead the dough once again for few seconds to ensure it is spongy and like elastic.

Now  sprinkle a little dry flour on the dough and roll it. Sprinkling of dry flour on the dough makes it easy for us to roll as it does not get sticky. Once the dough is rolled, divide it into small portions of equal size. You can use a knife cutter to cut the dough into small and equal sizes. Sprinkle some normal flour on the dough so they don’t get stuck to each other while you prepare the rest of the recipe.

Take one small portion and roll it again using the palms of your both hands. Add a little plain flour to it and roll it using a rolling pin. Dust it on the plain flour and roll it again to make thin round sheet. The sheet should be round like moon. Please ensure the edge of the sheet should be thinner compared to the centre which will make the momo tastier. Once the round sheet is ready, please cover it with the damp cloth.

Do the same with all the dough portions.

Step.4: Stuff the sheet with Momo stuffing

Take one sheet and place some stuffing on it.  Pinch the edge of the sheet and start folding it into small pleats. Gathering fleets and join them at the center. You can leave a little bit of gap at the center. You can even close it fully if you want.

Now, the pleated Momo will be ready for cooking and in a good shape. Prepare all the momos and cover them with a damp cloth or a moist napkin. Keep them aside for 5-10 minutes.

 

Step.5: Steam the Momos

Take a steamer pan and grease the bottom and sides of the pan with oil. Place all the momos on the steamer pan or an idli pan. Ensure that the momos are kept separate in the steamer pan (for idli pan not to worry as they are separate) with some space in between them so they do not get stuck to each other.

Now we can steam them using a steamer pan or electric. For idli pan you can cook using a pressure cooker. Add some water to the cooker , place the idli pan and cover the lid and cook. The water should be below the bottom layer of the pan. Cook at for 8 to 10 minutes.

Once the outer cover of the Momos become transparent and there is change in color, switch off the fire.

Wait for the Momos to become cool and serve them with chutney or chicken soup.

 

Chicken Soup

You can eat the momos with any chutney. However, I love these momos with chicken soup which I make then separately.

For Chicken soup you need:

1.       50 to 100 gram of chicken with bones

2.       2 tablespoon of oil

3.       1 small piece of ginger finely chopped

4.       2 to 3 flakes of garlic finely chopped

5.       1 medium sized finely onion chopped

6.       1 teaspoon of pepper

7.       1 teaspoon of cumin

8.        1 stem of Curry leaf (Remove leaves from the stem and wash)

9.       Coriander Leaf (Wash, cut and keep)

10.   Salt as per taste

 

Let’s prepare the soup

First grind the pepper and half tablespoon of cumin together in a mixie.

Put pressure cooker on medium fire. Once the cooker is hot add 2 tablespoon of oil to it. Add rest of the cumin to it and add chopped ginger. Add chopped garlic and fry for 30 seconds. Now, add the chopped onion and fry in high flame. Add a pinch of salt to the onion so it can get cooked nicely and fast. Once, the onion turns golden brown, add the curry leaf.  Reduce the flame and fry for some time. You can smell the faint aroma of curry leaves. Now add washed chicken pieces and stir fry for 2 minutes. Sprinkle the grounded pepper cumin powder on the chicken and add water according to your need. Add salt for taste and close the lid. Cook for 5 to 10 minutes. After 4 to 5 whistle switch off and wait for it cool. After opening the lid add the coriander leaf.

There you go. Your yummy yummy Momos with Chicken Soup is ready.
